It’s Who We Are.
A family, a river, and a herd we know by name.
We’re the Knapps — two parents, two daughters, and a herd of black Angus that keeps all four of us humble. Our ranch sits along the river in Idaho’s Bear Lake country, where cool mountain summers grow the kind of grass that makes exceptional beef.
What started with a few head of cattle and a stretch of river bottom has grown into a working ranch and a family way of life. Our daughters have grown up horseback — moving cows with us in the spring, checking pasture in the summer, and learning that good food and good land take honest work.
We’re not a big operation, and we don’t want to be. Staying small means we know every animal, walk every pasture, and stand behind every package of beef with our name on it.
Rotational grazing, healthy river banks, and soil that gets better every season. We plan to hand this place down — in better shape than we found it.
Low-stress handling, fresh grass, clean water, and time. No feedlots, no shortcuts — just cattle living the way cattle should.
When you buy our beef, you’re dealing with the family that raised it. Questions, custom cuts, a tour of the place — just ask.
The river gave this ranch its name, and it still sets the rhythm of the place — watering the pastures, cooling the herd in July, and carving the valley our cattle graze. Protecting it isn’t a marketing line for us; it’s the reason this land can keep doing what it does.
Follow the water and you’ll find our cows somewhere along it, doing what they do best: turning mountain grass into the best beef you’ve ever tasted.
